Before being dried in the sun, dried shrimp are frequently bathed in salt water, which functions as a natural preservative. The larger shrimp are usually more expensive than the smaller ones. Dried shrimp of various sizes are better suited to various recipes. The larger shrimp, for example, are excellent for seasoning soups, while the tinier shrimp are ideal for filling dumplings. I store medium-sized dried shrimp in my refrigerator on a regular basis.
